Can anyone recommend some good places in NSW that either restore or do good custom work with factory trim?

Best bet would be to gather together unbroken parts (in any colour) from wherever you can get them (wreckers, Ebay etc) and you can then either have a painter spray them or some crash supply places will mix up an interior colour in a pressure pack to suit your needs and just do it yourself. SEM brand is my favourite and I just run it though an airbrush for small parts or a spray gun for larger items. Plastic repair of original factory trim is also possible but unless it's a very hard to get part, like the instrument hood with uncracked attachment points, it'll probably be cheaper just to find good replacements. Labour rates these days kill anything else. Original fabric is getting hard to come by, but is still out there occasionally. What are you trying to get done?

I know Proseat do custom interiors for VL's. They might be worth a try. http://stores.ebay.com.au/PROSEAT-AUTO-INTERIOR-CENTRE
